top

What is the proper to way order food during dining?
If, after looking over the menu, there are items you are uncertain about, ask your server any questions you may have. Answering your questions is part of the server's job. It is better to find out before you order that a dish is prepared with something you do not like or are allergic to than to spend the entire meal picking tentatively at your food.

An employer will generally suggest that your order be taken first; his or her order will be taken last. Sometimes, however, the server will decide how the ordering will proceed. Often, women's orders are taken before men's.

As a guest, you should not order one of the most expensive items on the menu or more than two courses unless your host indicates that it is all right. If the host says, "I'm going to try this delicious sounding cheesecake; why don't you try dessert too," or "The prime rib is the specialty here; I think you'd enjoy it," then it is all right to order that item if you would like

How to order wine in a restaurant?

Be prepared.
Order the wine that is within the amount that you want to spend. It narrows the choices and focuses on specific wines within your price range. If the pricing is not shown on the menu, inform your criteria to the waiter discreetly. The waiter will guide to your preferred list of wine.
White, red or champagne.
It may depend on your personal taste, or those of your companions, or on the food you plan to eat. If you are hosting a party or business occasion, consider of buying two or three different types of wine with differing preferences.
Ask the waiter for advice.
If the outlet is known for its formality or high standards, the waiter is likely knowledgeable on the wines list and how it complements to each menu/dish items. Tell the waiter your taste preferences, how much you want to spend, and what you are planning to eat, and ask for a suggestion.
Stick to familiar brands and varieties.
Take those familiar brands of wine that is within the amount you want to spend. Familiar brands are likely to be a reliable quality, and relatively good in taste.

top
What type of wine matches with what type of food?
White Wine matches with Fish - White wines are more acidic than red and most people prefer a brut acid (i.e. lemon) with their fish.
Red Wine matches with Meat - Eat with meat makes the red wine seem softer.
Champagne matches with anything.

top
Can I drink red wine with fish?
Yes, only when the wine is chilled and the fish is not too oily (e.g. Mackerel, smoked salmon and herrings taste strangely metallic with red wine). Red wine is ideal with sea bass, monkfish, swordfish and seared tuna steaks. For barbecued fish or spicy flavours a Pinot Noir is the ideal choice.

top
What should I do when the wine has arrived?
Your waiter will bring the bottle at the table and show you the label on the bottle. This is to ensure that you are satisfied with the wine you have ordered.
Tips: check the bottle for the correct vintage that you wanted. If you wanted the year 1990 and your waiter has given you the year 1991, you are obliged to request a change. If your waiter cannot change it for you (simply because it is finished or was never in stock), consider changing your wine selection if you know the vintage makes a big difference.

Your waiter will uncork the bottle, present the cork to you and pour you a small taste, waiting for your approval before pouring for everyone else at the table. If you think the wine is okay, show the approval to the waiter and he will pour for everyone else.
Tips: If you think something is not right (i.e. the taste, or from the look at the cork), inform your waiter immediately and request for another bottle. Your waiter should not argue with you, unless your judgement of the wine is clearly off base.

top
How do I know if the wine is spoiled?
There are four kinds of problems that relates to spoiled wine. Hence these problems occur frequently. It may be due to corked, oxidised, volatile or storage problem.

Corked
If you noticed that the cork has a strong aroma, it usually means that the wine is affected by a damp cork. The damp cork will also show signs of deterioration. Therefore, always request you waiter to show the cork to you.

It is also a fact that about five percent of all corks develop a certain disease (not harmful to humans) that makes the wine tastes and smell like mouldy cellars or musty attics. To be on the safe side, request your wine to be not in corks. If there is one, choose a different selection of wine.

Oxidised
There are certain wines that may have a defect in the corking which allow air (or oxygen) to creep in. The smell of oxidised wine maremind you of cut fruits that had been laid at an open space for few days. There is also a possibility that is smells similar to vinegar.
Tips: some wines (e.g. Sherry, Arbois, Tokay) are oxidised on purpose. However, if your wine is an expensive that smells like Sherry, do to hesitate to send the bottle back.

Volatile. In wine terminology, volatile means wine essentially turning into vinegar. The smell of the wine is sharp and it reminds you about vinegar or nail polish remover. When you experience this, do to hesitate to send the bottle back.
Tips: Some wines that are turning into vinegar may not taste sour yet. Hence it is the aromatic aspects of vinegar that you should look for.

Storage. If you have asked for a wine vintage of this year or last year and your waiter had brought you an intensively yellow or brownish wine, it means that the bottle has not been stored or keep appropriately within the acceptable temperatures. It may have been subjected to high temperatures or sunlight. Either case, it is still not acceptable.
However, do note that if the wine is not spoiled, but still you don't seem to like it, you are obliged to accept it. With modern wine technology, you may not encounter spoiled wines very often.

top
What do quality ratings on wine bottles mean?
French wines have various quality indications on the label - best known is AOC (Appellation d'Origine Controlee). These quality ratings show that the bottled wine is well regulated and had passed a series of quality controls before sales.

Italy, Spain, Germany and many other countries have similar systems. The best way for the consumer to know what's in a bottle is to learn names of the producers.

top
When is it not appropriate to drink wine while eating?
When eating salad with vinegar or salad dressing - The acid in the salad dressing makes the acid in the wine seem dull.
When eating chocolates and citrus fruits.

top
How to make a gracious toast?
There are no hard-fast rules to toast-making and giving. What follows are guidelines to give you a starting point.
Be Eloquent, Whimsical, and Witty. Make sure that the toast you are delivering is appropriate to the intended audience and occasion.
Be Simple. Keep your toast short and to the point. Avoid use of big words. The simplest words often sound the most sincere.
Be Yourself. Give it from the heart.
Be Brief. Avoid more than just a few sentences. Don't use the toast as a soapbox.
Be Prepared. A good toast is a speech in miniature. Any good orator will tell you, it takes far more work to craft a short message, than a long speech. It takes practice to sound spontaneous. It's not a bad idea to have two or three short toasts memorized for when the opportunity presents itself. If you're quoting a well known work, know the context of the lines so as not to leave people reading something else in, between them.
Be Done. End on a positive note. Clearly define the end by saying "Cheers!", asking your audience to "Raise your glass," or some other accepted gesture.

top
How should I behave when receiving or giving a toast?
Never drink a toast or stand, when it's being offered to you. However, you should always stand up and respond to the toast, even if this means just thanking the host for the gesture.
Never should a toast be offered to the guest of honor until the host has had the opportunity to do so. If it appears that the host has no intention of offering a toast, it would be polite to quietly request the host's indulgence to do so yourself.
You should always stand when offering a toast unless it is a small informal group. Standing can help you to get the attention of the group and quiet them down. It is best not to signal for quiet by rapping on a glass. You could easily end up with nothing to toast with.
It is not a good idea to push someone to make a toast who would otherwise prefer not to. You might hear a toast that you would just as soon not hear.
Never refuse to participate in a toast. It is more polite and perfectly acceptable, to participate with a non-alcoholic beverage or even an empty glass than not at all.

Dinner Etiquette

Which Fork Do I Use?
By Jorj Morgan

Has this happened to you? You are invited by your biggest client and her team of executives to join her at her favorite, trendy, oh-so-chic restaurant for dinner. You've agonized over your outfit and reconfirmed your sitter. You arrive to find a table filled with enough sterling silver utensils to fill your entire kitchen drawer. Which one is which? And, which bread plate should you use - the one on the right, or the one on the left? Here is an easy guideline that will not only help you get through the meal but may ward off indigestion.

The serviette.
A maitre de escorts you to your table and gestures towards or pulls out your chair. Take the seat. He's offering you a view of the room or demurring to your hostess' seating choice. He may remove your napkin from the table and place it on your lap. He's not getting personal; he's using good manners. Courteously reply, "thank you." Leave the napkin on your lap for the remainder of the meal. If you excuse yourself for any reason, place the napkin on your chair - not on the table. The napkin is used to wipe crumbs from around your mouth. It is not meant to record an imprint of your new red lipstick. Try to restrain from blotting!

The place setting.
Many fine restaurants will set each place with several dishes. A large dish set at your place before you sit down at the table is the charger. This dish is meant as decoration and not really to function as a plate that holds food. The charger is usually removed before the first course is served. However, it may remain to cushion either a chilled salad or bowl of soup. After you have finished with this course, the entire place setting including the charger, soup or salad bowl and utensil is removed.

Your bread plate is placed on your left at about the eleven o'clock position of the charger. When offered a roll, place the roll directly onto the bread plate - never on the charger. Take butter from the butter dish to the bread plate - not directly to the bread. If someone at the table has chosen the wrong plate, you have two choices. You can follow suit, or decline the bread. Do not say, "I think that is my plate," to the offending tablemate - it's bad form.

The glassware
Stemware is place to the right and top of your place setting - at about one o'clock. Large goblets are filled with water. White wine is offered in a separate glass from red. If the brand of wine is changed during the meal, a fresh glass is placed for you. The idea is that each wine should be sipped from it's own glass. Wine connoisseurs suggest that you hold a wineglass by its stem. When a waiter pours water or wine, or places food in front of you it is good form to cordially thank him.

Utensils
The old rule of thumb is to start from the outside and work your way in when faced with a number of utensils. In most cases, this will work. But, it is a good idea to be able to differentiate between various utensils and know the specific use of each one. On your left at about nine o'clock you will find the forks. The outer most fork is a salad fork. Use it to nibble discreetly at your greens and place it on your salad plate when you are finished. Working your way toward the plate, the next fork is the largest and is meant to be used for the entrйe. A third, smaller fork placed directly to the right of the entrйe fork is placed there for use at dessert.

On the right at about three o'clock are the spoons and knives. The outermost spoon is a soupspoon and is usually larger than a teaspoon and is sometimes bowl-shaped. A second spoon placed to the left of the soupspoon is a teaspoon and is used to stir coffee. The knife is placed to the inside of the spoons and is to be used for the entrйe.

As with everything, there are exceptions to the rules. For example, a butter knife, which is smaller than a regular knife can sit on the right side of the charger, or directly on the butter plate. A teaspoon and dessert fork can sit in opposite directions at the top of the charger. This signifies that they are to be used at the end of the meal. A fish fork, if needed, is placed on the right side of the plate. And sometimes, a larger steak knife can be placed across the top of the charger.

One rule to remember is that you always set the utensils that you are using on the plate that you have eaten from when you are finished. Do not put soiled utensils on the tablecloth or placemat. Rest the utensil at an angle, at the top of your plate to signal the waiter that you are finished. If two dishes are used - for example soup served in a bowl on top of a plate or coffee served in a cup placed on a saucer - position your utensil on the bottom most plate and not in the bowl or the cup.

More dining tips
Here are a few more tips to get you through your next business dinner.

Defer to your host when making menu suggestions. Ask for her advice on food choices.
Always make eye contact, smile and say thank you to your waiters. This shows that you are gracious, polite and self-assured.
Avoid messy food choices. Unless you are prepared to wear a bib and use metal crackers - don't order a whole lobster.
If you are uncertain as to a utensil or plate, follow your hostess' lead. Your tablemates may not choose the right one either - but following suit is the preferred way to play this game.
Touch up make up, comb hair, and use cell phones away from the table.

Once you have mastered the place settings at the chicest restaurant, its time to share your knowledge at home. Help children to properly set the table, use the correct utensil, and return forks to their proper place. You will reap the rewards of your efforts when you take them out to your favorite restaurant and their manners are impeccable!
